Yums!

I made something so freaking good last night! I ate 2 and Ben ate 4... And only stopped cause I made him. They are for Ladies Night.

Mini Pineapple Upside Down Cakes!

2/3 cup packed brown sugar
1/3 cup butter, melted
2 (20 ounce) cans sliced pineapple
1 (18.25 ounce) package yellow cake mix
3 eggs
1/3 cup vegetable oil12 maraschino cherries, halved (I don't care for Cherries so I left these out)

Directions

1.In a small bowl, combine the brown sugar and butter; mix well. Spoon into 24 greased muffin cups. Drain pineapple, reserving the juice. Trim pineapple to fit the muffin cups; place one ring in each cup.

2.In a large mixing bowl, combine the cake mix, eggs, oils and 1-1/4 cups of the reserved pineapple juice; mix well. Spoon over pineapple, filling each cup two-thirds full.

3.Bake at 350 degrees F for 20-25 minutes or until a toothpick comes out clean.

4.Immediately invert onto wire racks to cool. Place a cherry in the center of each pineapple ring

Plans!

Layla's birthday is just around the corner. We like to take a little time off work and take her somewhere cool. Last year we went to Seattle to the Zoo and the Nirvana Exhibit at the EMT for Ben, Layla could care less. So this year we are trying to figure out what to do. We only have 2 full days. We can leave on a Tuesday night and have Wednesday and Thursday somewhere then we'll probably need to come home Thursday night or leave really early Friday morning. Friday we have family coming into town and Saturday is her actual party day!

We don't want to fly anywhere. I hate flying and love road trips.

We also had an issue with our hotel room when we stayed in Portland back in April, so I complaied to the hotel and they have offered us some perks to come back.

Picture Post

1) Layla waiting for the fireworks, kiddo stayed up until 10:30pm! Poor baby was so sleepy on the way home!

2) My loves! We found a good stop on some rocks to watch the fireworks.

3) Yesterday Layla waiting to attack her Uncle Eddie when he came over!

4) Elmer goes crazy when he sees water. Squirt guns make him nuts! He was trying to attack the water...

5) My little patriotic girl! While we were waiting for the fireworks she sang Happy Birthday to America no less than 8 times. It was really cute!
